Zakat al-Fitr should be paid before the Eid al-Fitr prayer. This is the most important deadline because the Prophet Muhammad ﷺ instructed Muslims to give it before people go out for the Eid prayer.
It may also be paid one or two days before Eid, as reported from Ibn Umar (RA). This allows the charity to reach eligible recipients in time for Eid.
"Whoever gives Zakat al-Fitr before the Eid prayer, it will be accepted as Zakat. But if given after the Eid prayer, it will be considered as ordinary charity."
— Abu Dawud

Some people may be unable to attend the Eid prayer — for example, women or those who are sick. For them, the best time is still the morning of Eid, even if they do not attend the prayer.
Paying after sunset on Eid day is prohibited (haram) without a valid excuse. If you pay after this time, it no longer counts as Zakat al-Fitr. It becomes an ordinary charity (Sadaqah) instead.
However, you are still obligated to pay it as a missed religious duty (qada). It does not simply disappear. You must make up for it as soon as possible.
As the Prophet (peace be upon him) said:
"Whoever gives Zakat al-Fitr before the Eid prayer, it will be accepted as Zakat, but if given after the Eid prayer, it will be considered as ordinary charity."
